Regional Bakeries Director: Coastal

The General Manager will provide overall leadership and accountability for the PMB, Durban and Cape Town bakeries, ensuring delivery of the Bakeries Business Strategy, sustainable growth, cost leadership and operational excellence.
The GM will have direct accountability for the performance of all three bakeries. The General Manager will also have direct operational responsibility for managing the PMB bakery.
The role requires strong commercial, operational, people and financial leadership, with a clear focus on restoring cost leadership, improving service and quality, strengthening governance and building a high-performance culture.

WHAT YOU WILL DO:

1. Drive Growth – EBIT and Volume

• Deliver monthly and annual EBIT targets across the three bakeries.
• Drive volume growth in line with business targets and strategy.
• Optimise channel mix and improve profitable growth.
• Identify and execute opportunities to improve revenue, margins and market share.
• Ensure disciplined management of costs, productivity and profitability

2. Restore Cost Leadership

• Establish a strong cost-conscious culture across all three bakeries.
• Drive overhead, labour, logistics, energy and manufacturing cost optimisation.
• Improve productivity and utilisation of bakery and distribution resources.
• Identify and eliminate waste, margin leakage and operational inefficiencies

3. Lead Supply Chain and Operational Excellence

• Ensure consistent delivery of supply chain, manufacturing and distribution KPIs.
• Improve OTIF, Hit Rate and bread availability.
• Drive daily driver balancing and strengthen distribution controls.
• Ensure effective capacity planning, stock management and inter-bakery supply.
• Lead continuous improvement across manufacturing and distribution operations.

4. Execute the Bakeries Business Strategy

• Translate the Bakeries strategy into clear priorities and actions for each bakery.
• Ensure execution of strategic initiatives and agreed business plans.
• Track performance against targets and intervene early where performance is off track.
• Build accountability and ownership at Bakery Manager level.

5. Governance and Compliance

• Ensure full compliance with the BMR, Company policies, SOPs, regulatory requirements and food safety standards.
• Strengthen governance, financial controls and operational controls.
• Ensure timely closure of audit findings and identified control gaps.
• Maintain a zero-tolerance approach to fraud, losses, safety breaches and non-compliance

6. Lead Values and a Winning Culture

• Build a high-performance culture based on accountability, teamwork, integrity and continuous improvement.
• Role-model the Bakeries values and expected leadership behaviours.
• Create a culture where performance, safety, quality and customer service are non-negotiable.
• Ensure effective collaboration between Manufacturing, Sales, Supply Chain, Finance, HR and other functions

• Ensure zero compromise on employee safety and food safety.
• Drive reduction in LTIs and CCPMU.
• Ensure consistent bread quality and adherence to product specifications.
• Embed a strong safety and quality culture across all bakeries.

WHAT YOU WILL BRING TO THE TABLE:

• Relevant completed Bachelors degree
• Minimum of 5 years management experience in Logistics , Depot , Sales , Bakery and Production Management
