Job Description
Join the Paris Ancillary Revenues Team as our new F&B Concepts Development Manager.
You’ll support the Vice President Concepts & Products ENA :
• To identify, define and manage the creation and on-going development and evolution of all Food & Beverage concepts in the region, including concept USPs, narrative and markers that comprise the philosophy, the tone of voice (TOV), the food and drinks offer, visual identity and branding, tableware and OS&E, and design look and feel and other associated information and assets
• To create, maintain and evolve professional, appealing, infomative and interesting concepts brand books (hard and soft), toolkits and SOPs to support Accor F&B Operations, hotel operations and ownership, to deliver market-leading F&B concepts in hotels, for renovations, conversions and new build projects.
• To define and develop F&B offers and supporing documentations and tools (as defined above) for non-concept related revenue streams, including breakfast, MICE, in-room dining (IRD) and grab & go and alternative revenue streams (dark kitchens and virtual restaurants)
MAIN ACCOUNTABILITIES:
You’ll participate stongly in the development, evolution and maintenance of the F&B concepts that support Accor’s strategic vision to be restaurateurs (commercial restauration & F&B brands standards), including:
Product Focus & Missions
1. Develop, evolve and maintain F&B concepts books, toolkits, brand standards and associated assets
2. Innovate, improve, expand, and push the boundaries for all F&B assets for breakfast, MICE (C&B), restaurant, bar, café and In-Room Dining
3. Manage 3rd party agencies and freelance partners to deliver project missions
4. Research, propose, identify solutions to operation challenges for F&B C&P
5. Trend and gap analysis
Brand Focus:
1. Premium, Midscale and Economy brands with significant weight on Mid & Eco
2. Europe & North Africa perimeter.
Define, create, develop and evolve the F&B offers for ‘A.C.E.S’ and ‘Originals’ concepts streams and other business critical concepts and offers, as defined by VP C&P, ENA
• Briefing and selection of the common core F&B products and references (breakfast, bars & restaurants’ MICE menus…) in collaboration with Accor Procurement, Culinary and F&B operations
• Develop mershandising guidelines encompassing the F&B hotel customer journey (360)
• Tableware and decoration’s sourcing for each concept and offer (Concept OS&E selection and sepcifications)
• Monitor and follow F&B trends, regionally and internationally and embrance new standards and innovations as appropriate
• Creation, maintenance and evolution of brand concept books (storytelling, concept positioning, markers, graphic universe/branding, look & feel)
• Develop and maintain operational toolkits (offers, menus , graphic charter / universe, tableware, materials, dress codes and outfit guides, staging, training, target / ideal organization, communications materials, operational retroplanning and scenography
• Production of F&B brand standards and SOPs / support tools and mechanics (photoshoots, POS, menu and offer colleterals and displays, F&B Accorlive intranet….)
Qualifications
Our ideal profile would be:
• 10 years’ experience in concept and product development, with strong, comprehensive understanding of F&B operations (hotel and non-hotel), and an in-depth understanding of F&B market trends.
• International exposure preferable. Must have relevant experiece in multi-country / regional management, with a starter-finisher mindsel and a high level of autonomy.
• Bi-lingual verbal and written French & English (At least B2 in English)
• Strong verbal and written presentation skills
• Pre and post opening F&B&E experience, marketing, concept definition and creation, branded venue roll-out, menu & offer development, in-concept animation, photograpgy and photoshoots, offers and promotions linked to concept philosophy, driven, self-motivated, starter-finisher, takes initiative and innovative
