Operate the Josper charcoal oven and grill station, preparing meats, seafood, and vegetables using live-fire techniques. Manage fire, temperatures, fuel, quality, presentation, timing, prep levels, and inventory. Collaborate on menu development, train line cooks, maintain food safety and workstation standards, and support high-volume dinner service. The role requires culinary experience, strong grilling and fire-management skills, teamwork, organization, and schedule flexibility.
