The Steward/Dishwasher keeps the heart of the kitchen running—clean, safe, and stocked. You’ll wash and sanitize wares, maintain work areas and floors, manage trash/recycling, and support the culinary team with setups, breakdowns, and deep cleans.
Key Responsibilities-
Warewashing
-
Operate dish machines and 3-compartment sinks; wash, rinse, and sanitize dishes, glassware, flatware, pots/pans to standard.

Sort and stage wares; air-dry and store in proper locations; polish glass/silver as required.

Cleanliness & Sanitation
-
Keep dish room, prep areas, and walkways clean and organized; sweep/mop floors; wipe and sanitize surfaces; change water/solutions per SOP.

Complete daily/weekly cleaning checklists (drains, walls, mats, equipment exteriors, kettles, steamers).

Safety & Compliance
-
Follow ServSafe/HACCP practices: proper chemical dilution, label/date, and safe storage; avoid cross-contamination.

Use PPE; maintain wet-floor signage; comply with OSHA and SDS guidelines.

Waste Management
-
Manage trash, recycling, and compost (if applicable); break down boxes; transport waste to compactors safely and on schedule.

Inventory & Pars
-
Maintain par levels of racks, bus tubs, towels, chemicals, and paper goods; report shortages or equipment issues.

Assist with receiving/put-away and rotation (FIFO) of dry and refrigerated goods as assigned.

Event/Service Support

Set and break down banquet/service stations; transport clean wares to outlets; return soiled wares promptly.

Assist cooks with basic prep or equipment moves when trained and directed.

Equipment Care

Clean and delime dish machines; empty scrap baskets; monitor wash/rinse temps and sanitizer ppm; submit work orders for repairs.

Qualifications

Prior steward/dishwashing or janitorial experience preferred (will train reliable, hard-working candidates).

Able to follow written/verbal instructions and sanitation standards; strong pace and organization.

Comfortable with hot, humid, and fast-paced kitchen environments and handling chemicals safely.

Food Handler certification preferred (or obtained within 30 days).

Reliable attendance; flexible schedule including weekends/holidays.
Physical Requirements

Stand/walk for entire shift; frequent bending, lifting, and reaching.

Lift/carry/push/pull up to 50–75 lbs (racks, pots, trash, cases).

Work around hot water/steam, chemicals (PPE provided), and wet/slippery floors.
Skills Required
