The Role:

The Stewarding Supervisor is responsible for overseeing the daily stewarding operation and supervising stewarding staff to ensure all kitchen, concession, banquet, and food service areas are maintained in a clean, safe, organized, and sanitary condition. This position supports convention center food and beverage operations by ensuring proper warewashing, equipment sanitation, inventory control, event support, and compliance with health and safety standards.

Essential Duties and Responsibilities

  • Supervise, train, and direct stewarding team members in daily operations.
  • Assist with scheduling staff and assigning work to meet operational and event needs.
  • Monitor employee performance and provide coaching to ensure productivity and compliance with department standards.
  • Oversee operation and maintenance of all dishwashing and warewashing equipment.
  • Ensure all china, glassware, silverware, cookware, utensils, and serving equipment are cleaned, sanitized, and available for service.
  • Maintain adequate inventory levels of smallwares, glassware, flatware, and kitchen supplies, report shortages, and breakage.
  • Coordinate the setup, breakdown, transport, and storage of equipment for banquets, concessions, catering functions, and special events.
  • Support banquet and culinary operations with plate-up, food delivery, buffet setup, and event execution as needed.
  • Ensure all kitchens, stewarding areas, storage rooms, loading docks, and back-of-house corridors are maintained in a clean and organized condition.
  • Conduct routine inspections of kitchen and food service areas to ensure compliance with sanitation and safety standards.
  • Ensure proper use, storage, and handling of cleaning chemicals in accordance with company policies and safety requirements.
  • Monitor waste disposal, recycling, grease management, and overall cleanliness of food service operations.
  • Maintain safe working conditions and ensure team members follow all safety procedures and wear required personal protective equipment.
  • Assist with inventory counts, equipment organization, and department projects assigned.
  • Support department leadership during high-volume events and operational needs.
  • Other duties as assigned.

Education and/or Experience          

  • High school diploma or GED preferred.
  • Minimum one (1) year of stewarding, kitchen operations, food service, or hospitality experience required.
  • Previous supervisory or lead experience preferred.
  • Experience in banquet, convention center, hotel, stadium, arena, or high-volume food service operations preferred.
  • Knowledge of commercial dishwashing equipment, sanitation procedures, and food safety standards preferred.

Skills and Abilities  

  • Ability to lead and motivate employees in a fast-paced environment.
  • Working knowledge of food safety, sanitation, and workplace safety practices.
  •  Strong organizational and time-management skills.
  • Ability to prioritize multiple tasks and meet operational deadlines.
  • Strong attention to detail and commitment to cleanliness and quality standards.
  • Ability to communicate effectively with culinary, concessions, banquet, and operations teams.
  • Ability to safely operate and train others on dishwashing equipment and cleaning procedures.
  • Ability to work flexible schedules, including nights, weekends, holidays, and special events.
  • Dependable, self-motivated, and able to work with minimal supervision.

Location: On Site, Broward County Convention Center

  • This position requires stooping and lifting. Substantial standing, walking, pushing and or pulling of equipment.
  • Daily lifting and carrying up to 50 lbs. up to 10 minutes at a time.
  • Constant reaching, standing, walking, and stooping.
  • Performing work through repetitive eye/hand coordination
  • Position requires walking and standing regularly.
  • Noise level in the work environment is usually moderate.
  • Exposure to heat and cold, dust pollen and fumes. 
  • Must be able to work extended and/or irregular hours, including nights, weekends, and holidays as needed.
