As a Principal Taquera/o (Kitchen Supervisor) at Tacombi, you play a key role in delivering the authentic taco experience, overseeing quality, efficiency, and pride in every dish served. You’ll support and lead our kitchen team to uphold Tacombi’s high standards of food preparation, presentation, and kitchen organization.

Responsibilities include, but are not limited to:

Kitchen Operations & Quality

  • Assist in ensuring that all Taqueros maintain proper station setup and pars, following the Kitchen Station Workbook guide.
  • Prepare items accurately based on Tacombi's Recipe Book, adhering to specified procedures.
  • Consistently uphold Tacombi quality standards, including cooking methods, portioning guidelines, and plating specifications.
  • Maintain sufficient levels of prepared products in the station to ensure smooth service.
  • Ensure proper presentation and garnishing of tacos.

Sanitation & Safety

  • During closing shifts, supervise the proper cleaning and closure of stations by Taqueros, coordinating with the on-duty Taquero supervisor.
  • Ensure compliance with NYC Health Department standards, including temperature checks and daily logs.
  • Keep the station organized and clean, following Tacombi's operating procedures.
  • Label, date, and store prep items in sealed containers using the FIFO METHOD (first in first out).

You should have…

  • Flexible schedule and ability to work days, nights, weekends, and holidays.
  • Able to work long hours
  • Minimum 1-2 years of experience as a Line Cook.
  • A positive attitude and a team-leader mentality.
  • Detail-oriented and proactive
  • Multi-tasks efficiently
  • Ability to work in a fast-paced, energetic environment.
  • Clean and organized with an understanding of DOH standards.
  • Holder of a Food Handler certificate
  • Knowledge of Mexican Cuisine
  • Ability to lift a minimum of 50 lbs.
  • Ability to learn, give direction, and work effectively in a team environment

What We Do

Tacombi started in 2006 on the sand-dusted streets of Playa Del Carmen with a converted taco-serving bus and a dream to share Mexico with the world. We opened our first taqueria in a downtown garage in New York in 2010, and also started producing our own authentic, traditional “Vista Hermosa” tortilla products to preserve and share the flavors of Mexico. We have continued to share Mexican taco culture through neighborhood taquerias across New York, Washington DC and Miami and offer our Vista Hermosa products through stores across the country.

As Tacombi opens kitchens in new cities, we have committed to grow our nonprofit The Tacombi Foundation and The Tacombi Community Kitchen, which was established to fight food insecurity and provide food relief for those in need.
