The Role of the Pastry Commis I
The Pastry Commis I assists in preparing high-quality pastries, desserts, and baked goods while maintaining consistency, presentation, and flavor excellence. They follow kitchen management’s direction for breakfast, lunch, and dinner service, ensuring adherence to quality standards and food safety regulations. This role requires precision, creativity, and teamwork to deliver exceptional pastry creations in a clean and organized environment.
Key Functions

Work with the entire Culinary Team on future planning, daily ordering, and activities that directly impact guest satisfaction.

Focus on taste and consistency when preparing food or pastries for guests, always striving for perfection.

Maintain workstations and refrigeration in accordance with the Culinary Division Master Job Description Manual.

Adhere to high sanitation standards in all pastry-related outlets as outlined in the Culinary Division Master Job Description Manual.

Prepare food items according to guest orders, ensuring consistent quality by following recipe cards, portioning, and presentation standards; complete mise en place and set up stations for breakfast, lunch, and dinner service.

Train, motivate, discipline, and supervise kitchen employees to ensure all cultural and core standards are met.

Operate, maintain, and properly clean kitchen equipment, including deep fryers, broilers, stoves, steamers, food processors, mixers, slicers, ovens, steam tables, tilt kettles, waffle irons, and flat-top grills.

Label all food containers and rotate stock as per policy, ensuring perishables are stored at proper temperatures; check pars for shift use, determine necessary preparations, freezer pulls, and line setups; monitor stock levels and shortages; return unused food to designated storage areas, properly covered and dated.

Assist in developing corrective actions for food cost management; minimize food waste, loss, and improper usage per company policies.
