Job DescriptionWe are looking for a meticulous and proactive Hygiene / HACCP Manager to oversee all aspects of hygiene, sanitation, and food safety across the property. This role is critical in ensuring compliance with local regulations and international HACCP standards while fostering a culture of health, safety, and sustainability. You will partner with Culinary, F&B, and Operations teams to implement best practices, train teams, and maintain the highest levels of guest and colleague safety.
What you’ll do
Develop, implement, and monitor hygiene policies and procedures in line with HACCP standards and local regulations.
Conduct regular inspections of kitchens, restaurants, bars, and storage areas to ensure compliance with hygiene and sanitation standards.
Lead internal and external audits, maintaining accurate records and ensuring timely corrective actions.
Train and coach culinary, stewarding, and service teams on hygiene practices, safe food handling, and sanitation procedures.
Manage pest control programs, chemical usage, and sanitation equipment.
Collaborate with Culinary and F&B teams on menu development, food storage, and preparation processes to ensure compliance.
Monitor water safety, environmental hygiene, and waste management across the property.
Stay updated on global best practices, local authority regulations, and emerging trends in food safety and hygiene.
Report regularly to senior leadership on compliance status, risks, and improvement initiatives.
Champion a culture of safety, sustainability, and accountability across the property.
What we’re looking for
Bachelor’s degree in Food Science, Environmental Health, or related field.
Certified in HACCP implementation; additional certifications in ISO, food safety, or hygiene management are an advantage.
Minimum of 5 years’ experience in a hygiene or HACCP management role, preferably within luxury hospitality.
Strong knowledge of local and international food safety standards and regulations.
Excellent communication, training, and leadership skills.
Detail-oriented with strong organizational and auditing abilities.
Ability to work collaboratively with diverse teams and lead change effectively.
