About Canonita Lake Nona

Canonita Lake Nona is a new, elevated expression of Tavistock’s Mexican concept, bringing scratch-made, flavor-driven cuisine and a vibrant bar program to the Lake Nona West lifestyle center. Building on the success of Canonita at The Venetian in Las Vegas, the Lake Nona location will feature modern Mexican dishes, street-inspired bites, tequila- and mezcal-forward cocktails, and an energetic indoor/outdoor dining experience.

Role overview

We are seeking experienced, guest-obsessed Restaurant Managers to join the opening leadership team at Canonita Lake Nona. Reporting to the General Manager, you will help lead front-of-house operations, develop the service team, and ensure every shift delivers a consistent, elevated Canonita experience.

Key responsibilities

Pre-opening & training

  • Support the GM in recruiting, interviewing, and onboarding servers, bartenders, hosts, and support staff.
  • Help build and deliver training on service standards, steps of service, menu knowledge, and guest engagement.
  • Assist with FOH setup: floor plans, table numbering, sidework systems, opening/closing checklists, and POS configuration.

Shift leadership & guest experience

  • Act as a visible floor leader during service, managing sections, pacing, and guest flow.
  • Maintain a warm, professional presence—greeting guests, resolving issues, and driving memorable experiences.
  • Partner with the bar and kitchen teams to ensure accurate orders, timely delivery, and polished presentation.
  • Monitor reservations, wait times, and table turns to balance high volume with a relaxed, upscale atmosphere.

Team development & culture

  • Coach and support FOH team members with real-time feedback, pre-shift meetings, and ongoing training.
  • Help foster a positive, inclusive culture built on teamwork, accountability, and hospitality.
  • Recognize and celebrate strong performance; address performance gaps quickly and constructively.

Operational excellence

  • Ensure all FOH areas meet or exceed cleanliness, safety, and brand standards at all times.
  • Enforce cash-handling, tip-share, and alcohol-service policies in line with Tavistock procedures and local laws.
  • Assist with ordering and inventory for FOH supplies (smallwares, disposables, uniforms, etc.).
  • Help execute promotions, events, and seasonal initiatives that drive traffic and check average.

Financial support

  • Support the GM in managing labor during shifts—adjusting floor plans and staffing to match business levels.
  • Monitor key shift-level metrics such as comps/voids, upselling, and guest feedback; identify improvement opportunities.

Requirements

Qualifications

  • 2–3+ years of front-of-house leadership experience (Supervisor, AGM, Manager) in full-service, high-volume restaurants.
  • Strong floor presence with a genuine passion for hospitality and guest relationships.
  • Comfortable leading busy services, directing a team, and making quick decisions under pressure.
  • Solid understanding of basic restaurant financial drivers (labor, COGS basics, check average, comps/voids).
  • Experience opening a new restaurant or working in a lifestyle center/resort environment is a plus.
  • Excellent communication, conflict-resolution, and coaching skills.
  • Ability to work evenings, weekends, and holidays in line with business needs.
