Position OverviewThe Lead Expediter is a commissary-based role responsible for expediting orders from our central production kitchen, ensuring that all items are packed accurately, labeled correctly, and prepared properly for shipment to client locations.
This role is the critical link between kitchen production and outbound logistics, ensuring that every order leaves the commissary complete, on time, and to the highest standards of quality and accuracy.
We are looking for a candidate who is:

- Calm and effective under pressure during high-volume order processing and packing
- A strong communicator who coordinates between the kitchen, packing, and logistics teams
- Committed to food safety, proper packaging, and shipment accuracy
The ideal candidate has strong kitchen or commissary knowledge, an eye for detail, and the organizational skills to keep order fulfillment running smoothly during peak production periods.
ResponsibilitiesOrder Expediting & Quality Control (45%)-
Review and verify all outbound orders against order tickets and packing lists for accuracy and completeness
- Inspect all packed items for quality, proper portioning, labeling, and temperature compliance before shipment
- Manage the timing and flow of order fulfillment to ensure all shipments are packed and staged on schedule
- Communicate order specifications, special dietary requirements, and modifications clearly to kitchen and packing staff

Lead the pick & pack team to work efficiently and effectively.
- Coordinate with kitchen production and logistics teams to ensure orders are properly re-thermed, packed and ready for dispatch
- Oversee proper packaging methods, including correct containers, insulation, and temperature controls for transit
- Organize and stage completed orders by route, delivery time, and client location for efficient loading
- Coordinate with the delivery team to ensure timely shipment from the commissary.

Ensure all food leaving the commissary meets GTF quality, packaging, and labeling standards
- Monitor food temperatures during packing and ensure proper cold chain management for transit
- Support compliance with food safety protocols, FDA and USDA regulations, and sanitation standards in the commissary
- Maintain clean, organized packing and staging areas throughout production

Track and communicate inventory levels of packaging supplies, containers, and labels
- Flag order discrepancies, shortages, or production issues to kitchen leadership promptly
- Take on additional responsibilities as needed to support smooth daily commissary operations

2-4+ years of experience in a commissary kitchen, food production, or high-volume food packing environment
- Strong knowledge of food packing, portioning, labeling, and shipment preparation
- Excellent communication and organizational skills
- Ability to remain calm, focused, and effective during high-volume order fulfillment
- A commitment to personal accountability and continuous learning
- Food Handler’s certification or willingness to obtain

Title: Lead Expediter
Location: Onsite, GTF Commissary (Brooklyn, NY)
Schedule: Monday to Friday; early morning start times; occasional weekends as needed
Reports to: Commissary Kitchen Manager
Compensation: $22-25/hour
