THE JOB:

The Restaurant General Manager oversees all aspects of restaurant management, providing leadership to the Assistant General Manager, Assistant Manager, and service team in alignment with the MGM brand. They drive operational and financial goals, optimize reservations, monitor staff performance, scheduling, and training, and execute F&B initiatives. They maintain facilities to MGM Resorts standards and ensure high customer satisfaction and exceptional guest experiences. All duties are performed in accordance with company policies and procedures.
THE DAY-TO-DAY:

• Oversee daily restaurant operations, including labor productivity, scheduling, inventory control, guest service standards, and the development and execution of marketing strategies to drive profitability. Co-own the restaurant’s business plan with the Executive Chef and represent the restaurant in divisional, property, or corporate meetings.

• Implement policies, procedures, pricing initiatives, training programs, and menu guidelines for the restaurant staff. Lead the execution of F&B and company-wide initiatives. Ensure the highest standards of health, sanitation, and cleanliness in all beverage areas. Ensure staff completes all company compliance training.

• Manage HR responsibilities, fostering a work environment that promotes teamwork, feedback, recognition, and employee satisfaction. Oversee hiring, training, and succession planning aligned with the company’s diversity goals. Ensure compliance with company policies, legal requirements, and collective bargaining agreements.

• Engage with guests to ensure satisfaction and address complaints appropriately. Manage guest feedback channels through approved company practices. Collaborate with the Executive Chef and culinary team to ensure smooth service between the kitchen and dining room.

• Maintain excellent knowledge of the venue’s food & beverage products, menu items, and equipment.

THE IDEAL CANDIDATE:

• Bachelor's Degree or equivalent experience

• 2+ Years of Prior Relevant Experience

• Works varied shifts including holidays and weekends
