Role
The Director of Outlets at Amangiri serves as second in command of the Food & Beverage division, supporting the Food & Beverage Director in leading operations across all dining venues, including restaurants, in-room dining, banquets, and special events. This role combines hands-on floor leadership with strategic oversight to ensure exceptional guest experiences, operational efficiency, and high team performance.

Responsibilities

Operational Leadership

·         Assist in managing all outlets; assume full leadership in the Director’s absence.

·         Maintain visible presence on the floor to uphold service standards.

·         Oversee daily operations, including set-up, breakdown, and readiness of venues.

·         Coordinate with the Culinary Team for seamless service execution.

·         Address guest concerns promptly and ensure exceptional dining experiences.

Team Management

·         Co-lead the implementation of 4DX goals and track progress on key measures.

·         Lead, train, mentor, and evaluate managers, supervisors, and F&B staff.

·         Conduct effective daily briefings to improve communication and operations.

·         Enforce grooming, conduct, and service standards in line with Aman values.

·         Foster a collaborative, accountable, and positive work environment.

Administrative & Financial Oversight

·         Assist with scheduling, payroll, inventory control, and cost management.

·         Monitor beverage costs and manage durable and non-durable goods.

·         Support labor planning to align staffing with operational needs.

·         Maintain accurate POS systems, menus, and pricing updates.

Guest Experience & Standards

·         Enforce sequence of service, LQA, and quality assurance standards.

·         Track and honor guest preferences, allergies, and special occasions.

·         Collaborate with Reservations and Guest Experience teams for personalized service.

·         Gather guest feedback and implement service improvements.

·         Ensure recovery plans for guest concerns to build loyalty.

Training & Standards Implementation

·         Develop SOPs and training plans across outlets.

·         Monitor service through audits and implement corrective actions.

·         Lead menu rollouts, promotions, and experiential dining initiatives.

·         Ensure onboarding and cross-training for operational flexibility.

·         Organize workshops, tastings, and refreshers to maintain high standards.

Qualifications

·         Minimum 5 years in previous luxury F&B operations, 3+ years in leadership.

·         Bachelor’s degree in hospitality or equivalent experience preferred.

·         Strong leadership, organizational, and multitasking skills.

·         Knowledge of food, beverage, and wine service; hands-on leadership style.

·         Proficiency in POS and hospitality software (Micros, SevenRooms, Opera).

·         Excellent communication skills in English; additional languages a plus.

·         Ability to work weekends, holidays, and extended shifts.

·         Valid driver’s license with clean record; TIPS & ServSafe certified.

·         Previous Forbes Five-Star luxury hospitality training or ultra-luxury equivalent.

Working Conditions

·         Indoor/outdoor work in various climates including extreme weather.

·         Physical duties include standing, walking, bending, and lifting up to 45 lbs.
