Plans and directs the activities in Dietary Department to provide the highest quality of service and product to residents in a cost-effective manner. Responsible for initiating, completing, and maintaining nutritional care plans of residents.
EDUCATIONAL REQUIREMENTS:
High school graduate. Graduate of an approved Dietary Manager course and Certified as a Dietary Manager. Basic computer skills.
SPECIFIC REQUIREMENTS:
Knowledge of general nutrition. Able to promote cooperation between Dietary and other department employees. Works in conjunction with consultant dietician. Must be able to hire, orientate, train, supervise, evaluate, and discipline Dietary staff.
QualificationsPlans and implements menu cycles for all diets.
Purchases food and supplies in accordance with menus.
Maintains records of all purchases.
Does monthly inventory and prepares reports.
Hires necessary staff to provide dietary services to residents.
Instructs and supervises Dietary staff in use and maintenance of equipment.
Instructs staff in sanitation procedures.
Instructs staff in safety procedures.
Supervises production and serving of food by Dietary employees.
Monitors service of food to ensure physician's diet orders are followed.
Evaluates and disciplines Dietary employees.
Conducts monthly Dietary meetings.
Conducts Dietary in-services when necessary.
Establishes work schedules for Dietary employees.
Develops and implements written departmental policies and procedures.
Interviews each new resident and completes diet history for resident.
Completes nutritional assessments, develops a care plan, and makes chart note on each new resident. Updates a minimum of quarterly.
Attends resident's staffing as needed.
Completes Dietary cardex file and tray cards on each new resident. Updates when changes occur.
Communicates residents’ nutritional needs to Dietary staff.
Meets monthly with consultant dietician.
Keep track of oxygen supplies to include ordering, reviewing invoices, inventory, etc
Oversee Central Supply, tasks include: ordering supplies, inventory, reviewing invoices, stocking supply closets
Skills Required
- High school graduation
