General Statement of Responsibilities:
The Assistant Food & Beverage Manager supports the Food & Beverage Manager in the daily operation, financial performance, and overall management of the Food & Beverage Department. This position assists in achieving departmental financial objectives, maintaining internal controls, ensuring high standards of food quality and service, and supervising staff across all food and beverage outlets. The Assistant Food & Beverage Manager plays a key role in cost control, staff development, and customer satisfaction while helping to ensure compliance with casino policies and regulatory requirements.
Specific Areas of Responsibilities:
- Assist the Food & Beverage Manager in overseeing the daily management, budgeting, and operation of all food and beverage outlets, including the restaurant, bar, and kitchen.
- Support the development and achievement of short- and long-range financial objectives consistent with overall casino goals.
- Help monitor food, beverage, and labor costs to ensure profitability while maintaining high-quality service standards.
- Assist in establishing and maintaining effective internal controls for food, beverage, and labor expenses.
- Supervise daily operations to ensure excellent customer service, proper staffing levels, and adherence to operational standards.
- Assist with hiring, training, scheduling, coaching, and disciplining food and beverage staff.
- Conduct or assist with performance evaluations for supervisory and hourly staff as directed.
- Support the implementation of existing programs and assist in developing new food and beverage concepts.
- Work closely with Marketing and Sales to support banquets, promotions, and special group events.
- Ensure compliance with health, safety, sanitation, and gaming regulations.
- Act as Manager-on-Duty in the absence of the Food & Beverage Manager.
- Assist with departmental profitability while maintaining a first-class food and beverage operation.
- Help standardize portion control and ensure proper inventory management.
- Support consistent execution of food quality, presentation, and service standards.
- Promote teamwork, professionalism, and positive guest relations.
- Perform other duties as assigned.
Minimum Qualifications:
- Must be age 21.
- High School graduate or equivalent.
- Written and oral communications are required in the primary language used in the work area.
- Previous restaurant related experience.
- Must have successful supervisory experience.
- Understanding of the importance of cost controls.
- Must pass pre-employment drug screen.
- Must qualify for a Gaming License.
- Must be able and willing to work any schedule, holidays, and weekends.
Working Conditions:
- Work is primarily performed in a casino and restaurant environment with exposure to noise, smoke, crowds, continuous activity, and varying temperatures.
· Must be available to work a flexible schedule, including evenings, weekends, holidays, and overnight shifts as required.
· May be required to work extended hours during special events, high-volume periods, emergencies, or operational situations.
· May require extended periods of standing and walking.
· Must be able to respond promptly to operational emergencies and management calls.
Physical Qualifications:
- Ability to sit, stand, and walk for extended periods.
- Ability to lift up to 25 pounds occasionally.
Ability to inspect operational areas throughout the casino property.
Licensing and Background Requirements
Employment in this position is contingent upon satisfying all applicable Tribal, casino, and regulatory requirements, which may include:
- Must be able to obtain and maintain a Tribal Gaming License.
- Eligibility for and maintenance of all required gaming licenses, work permits, or regulatory approvals.
- Compliance with applicable Tribal gaming ordinances, regulations, policies, and procedures.
- Successful completion of required pre-employment screening and other employment conditions established by the casino.
