Eliza Jennings, a nationally recognized leader in person-centered care, is seeking a full-time Assistant Dietary Manager, at its Skilled Nursing and Rehabilitation Community, located on the Westside of Cleveland.

Hours for the available position vary from 6:00am -2:00 or 11:00am -7:00pm.
Every other weekend and every other holiday are required.

Summary:

Assist the Executive Chef with oversight of meal services for residents assuring individual resident diet adherence, adequate scheduling, regulatory compliance and resident satisfaction.

Cook duties include, but are not limited to:

  • Serve appetizing and attractive meals that exceed the elder’s expectations.
  • Provide elders a comfortable environment while serving food in the dining rooms.
  • Clean and sanitize dining room, dishes and all utensils so they are ready to use for each meal.
  • Fully stock pantry and kitchenettes with items necessary for the delivery of mealtime service.
  • Candidates must enjoy working with older adults and possess excellent customer service skills.

Supervisory duties include, but are not limited to:

  • Assume the authority, responsibility, and accountability of directing the dietary assistants in the absence of the Executive Chef.
  • Assist with orientation and training of dietary servers.
  • Work as a Cook as needed.
  • Assist Executive Chef to ensure execution of dietary department policies and procedures in accordance with applicable rules, regulations, laws, and codes.
  • Monitor all temperature logs for completion including food and refrigerator/freezer.
  • Monitor food items to ensure proper labeling, dating and storage.
  • Ensure proper food handling techniques, food safety, and sanitation procedures are followed according to HACCP guidelines.
  • Oversee and ensure the cleanliness and sanitation of the pantry and dining room areas with established policies and procedures.
  • Assist Executive Chef with Management staff: select, hire, train, counsel and schedule staff; assure performance and morale. Evaluate staff and administer discipline as required.
  • Review diet orders for new admissions; maintain resident diet card system, noting physician diet orders, resident food preferences and any known food allergies.
  • Continually monitor diets and update diet census; review care plans and process diet changes. Work with dietician, as required, to implement changes.
  • Assure that food served to residents is of the highest quality. Check meal trays and assure dietary staff is following posted menus and menu spreadsheets. Monitor food for taste, appearance and proper temperature.
  • Respond to resident and family member feedback; address concerns in absence of Executive Chef.
  • Assist Executive Chef to assure adequate staffing; monitor floor rounds and assure quality of service.
  • Assist with special events (cookouts, picnics etc.).

Requirements:

  • Must have previous experience in dietary in a long-term care or assisted living setting.
  • Serve Safe Certification and/or Person in Charge Certification
  • Demonstrated ability to comply with dietary instructions and provide customer service and satisfaction.
  • Demonstrated knowhow of proper infection-control methods including cleaning, storage and food handling.
  • Basic computer proficiency (must have experience with Microsoft Word and Excel) Scheduling software experience is a plus.
  • Ability to practice good conflict management, communication, and customer service.

Skills Required
